Fwd: Christmas Dinner Asian Inspired 2013

Teriyaki Marinated Beef Ribs- Smoked 5 hours

Dim Sum Menu- Firecracker Shrimp in Spring Roll fried in peanut oil..with a sweet chilli sauce dip

Beef Dumpling- Beef Steak-minced , add onion chopped fine,sesame oil, fresh grated ginger ,organic soy sauce, hoisen sauce,pepper
Wheat starch dough we put through the pasta machine for a thin consistency.. place teaspoon or so of meat mixture on the round dough cut out, wet edge with water, fan fold and seal.

Pot Stickers- Napa cabbage sliced thin, salt and let sit to draw out water, mix ground pork ( we used smoked pork butt minced),
ginger, soy, sesame oil, wheat starch dough

Shrimp dumpling with Rice/Tapioca Dough-Minced or use chopped fresh shrimp, ginger, soy, teriayki

Barbeque Buns-Smoked pork butt shredded , homemade BBQ sauce with orange juice and grated orange.. marinate pork in the sauce... take yeast dough roll out.. make rounds, place bbq meat in the center , make a pocket or bun.. proof in steamer for half an hour then full steam for about 12 minutes..

What a great way to spend time with family creating, cooking and eating great food!

Ben's Weekday Homemade Tortellini

Made shrimp tortellini`s and saffron pasta from scratch ( roll out with a rolling pin), shrimp was diced and flavored with seafood seasoning, add Parmesan, boiled tortellinis and threw into pan with Alfredo sauce (pick your favorite jar sauce), boiled pasta separately, mixed and served

Veal Sweetbreads with Kale Sauteed in Rice Wine Vinegar with Apples, Bacon and Cider Vinegar Jus

Go on You Tube to see how to prepare the sweetbreads a head of time , needs to be done at least 24 hours prior. After Sweetbreads have been prepared, cleaned and pressed. Blanch them in chicken stock for about ten minutes. Remove and drain, set aside.
Prepare kale remove center stalk, chop coarsely. Saute kale in butter barely cook. Cover , keep warm. Slice apple thin , but not to thin saute in butter with bacon that has been precooked and chopped course. Add apple vinegar and butter saute till starts to thicken but apples don't fall apart. Keep warm. Dip sweetbreads in milk then flour and breadcrumbs with a bit of salt to taste and adobe seasoning. Saute in med high pan turning till cooked, don't over cook!  Lay Kale on warm plate, place sweetbreads on top and add apples on the side. YUM!!!! tender goodness!

Chicken Parmesan with homemade ragu

Slice a large chicken breast in half for two servings. Coat in milk and breadcrumb, flour mixture. Fry in olive oil/ butter combo till just done. Make homemade sauce saute garlic, sweet onion till just soft and can of roasted whole tomatoes, one cup chicken bouillon, 1/2 cup red wine, basil , adobe salt to taste. Cook till thick. Coat bottom of casserole with sauce , lay cooked chicken breasts on top. Layer with mozzarella, parmesan and a bit more sauce. Bake at 350 till just bubbling. Enjoy! ( you could cook some pasta on the side or eat as is, with some french bread or garlic bread!)

Sweet Potato and Fig

- Roast 4 Sweet Potatoes (tossed in 3 Tbls of Olive Oil, S&P)
- Fry 12 Green Onions in 2 Tbls Olive Oil with 1 Hot Red Pepper
- Segment 6 RIPE Figs
- Reduce 3 Tbls Balsamic (Commercial and Cheap) with 1.5 Tbls Sugar
- (Optional, Soft goat milk's cheese)
- Season with Maldon Salt and Black Pepper
 
Throw all together. From Jerusalem Cookbook! 

We ate with Mom, Dad, Yael, Jim, Aunt Jean and Tom after Tom's art show! Served with grilled shrimp in a Thai pepper sauce over Quinoa.

Swordfish

Grilled Swordfish with Salsa Verde. Very easy, chop capers, dried seaweed( soaked in water) flat leaf parsley, one teaspoon of anchovie paste or one anchovy chopped fine, extra virgin olive oil,red pepper flakes salt , pepper. Let meld in frig for a bit.. then smother your favorite grilled white fish!

Plum Semi freddo




Plum Semi-Freddo.. so easy to make, can use any fruit you like. Recipe in July Bon-Appetite.. definitely a keeper! Great mid day treat or for company, worth the effort!
