Go on You Tube to see how to prepare the sweetbreads a head of time , needs to be done at least 24 hours prior. After Sweetbreads have been prepared, cleaned and pressed. Blanch them in chicken stock for about ten minutes. Remove and drain, set aside.
Prepare kale remove center stalk, chop coarsely. Saute kale in butter barely cook. Cover , keep warm. Slice apple thin , but not to thin saute in butter with bacon that has been precooked and chopped course. Add apple vinegar and butter saute till starts to thicken but apples don't fall apart. Keep warm. Dip sweetbreads in milk then flour and breadcrumbs with a bit of salt to taste and adobe seasoning. Saute in med high pan turning till cooked, don't over cook! Lay Kale on warm plate, place sweetbreads on top and add apples on the side. YUM!!!! tender goodness!
